Izakaya — When a Liquor Store Became a Place to Stay
The Japanese word izakaya (居酒屋) tells the story of how this uniquely Japanese drinking place began.
In the Edo period, a sakaya (酒屋) was simply a shop that sold sake. Customers bought their sake and took it home. But some customers did not want to wait. They began drinking their sake right there at the shop.
The practice became known as izake (居酒) — literally, “staying to drink.”
Liquor shops soon realized that if people were going to stay and drink, they might also want something to eat. Simple snacks and dishes were added. Eventually, some shops became places primarily for drinking and eating rather than simply buying sake.
The sakaya had become the izakaya.
Interestingly, the old idea still survives today in the tradition called kakuuchi (角打ち), where customers buy alcohol from a liquor store and drink it there, often standing.
Japanese culture often evolves this way. A small convenience becomes a custom, the custom becomes a business, and eventually the business becomes part of the culture.
Sometimes innovation does not begin with a grand idea.
It begins with a customer saying:
“Can I drink this here?”
