Higher Turnover Is Not the Only Way to Increase Profit

Serve customers faster. Clear the table sooner. Seat the next customer. Sell more in the same amount of time.
That makes sense—but it is not the only business model.
椿屋コーヒー (Tsubakiya Coffee) in Japan takes a different approach. Instead of rushing customers, it creates an environment where people are comfortable staying longer. Elegant interiors, siphon-brewed coffee, attentive service, desserts, and a classic coffee-house atmosphere are all part of the experience.
The strategy is simple: increase the value of the customer, not necessarily the speed of the customer.
If customers are willing to spend more because they value the experience, slower turnover can still produce a healthy business.
This applies far beyond coffee shops.
As business owners, we often look for ways to become faster, cheaper, and more efficient. But efficiency has limits. Cutting time, cost, and service can eventually reduce the very value customers are paying for.
Sometimes the better question is not:
“How can we serve more customers?”
It is:
“How can we make each customer worth more—and give them more value in return?”
That is a very different way to think about growth.
