Tofu Hyakuchin: The 1782 Cookbook That Turned Tofu into Fine Cuisine

 

More than 240 years ago, Japan published one of the world's most remarkable cookbooks devoted to a single ingredient.

 

Published in 1782 during the Edo Period, Tofu Hyakuchin (豆腐百珍), meaning One Hundred Tofu Delicacies, introduced one hundred creative ways to prepare tofu. Written under the pen name Seikyō Dōjin Kahitsujun (醒狂道人何必醇), the book demonstrated that an inexpensive everyday food could be transformed into elegant and delicious cuisine.

 

The recipes were grouped into six categories based on their sophistication, ranging from simple home-style dishes to refined meals suitable for special occasions. The cookbook quickly became a bestseller and inspired many similar "Hyakuchin" ("One Hundred Delicacies") books featuring other ingredients.

 

What makes Tofu Hyakuchin so special is its philosophy. It teaches that great cooking depends not on expensive ingredients, but on imagination, skill, and respect for food. That idea remains a cornerstone of Japanese cuisine today.

 

Many recipes resemble dishes still enjoyed in Japan, including grilled tofu, chilled tofu, fried tofu, and tofu simmered in broth.
