The Discovery of Umami: Dr. Kikunae Ikeda and Ajinomoto
 
When people think of the five basic tastes, they usually name sweet, sour, salty, and bitter. But there is a fifth taste that was discovered by a Japanese scientist: umami.
 
In 1908, Dr. Kikunae Ikeda, a chemistry professor at Tokyo Imperial University, noticed that the rich, savory flavor of kombu (kelp) broth could not be explained by the other four basic tastes. After careful research, he identified glutamateas the compound responsible for this unique flavor and named it umami, which roughly means "pleasant savory taste."
 
Dr. Ikeda believed this discovery could improve nutrition and make food more enjoyable. Working with entrepreneur Saburosuke Suzuki II, he developed a practical seasoning made from glutamate. In 1909, it was introduced to the market under the brand name Ajinomoto, meaning "the essence of taste."
 
Today, umami is recognized worldwide as the fifth basic taste, and scientists know that humans have specific taste receptors for glutamate on the tongue. Foods naturally rich in umami include kombu, tomatoes, mushrooms, aged cheese, soy sauce, cured meats, and many fermented foods.
 
Dr. Ikeda's discovery changed not only Japanese cuisine but also food science around the world. More than a century later, the word "umami" is used internationally, making it one of Japan's most influential contributions to culinary culture.
