Not an Egg? The Mystery of Kewpie’s “Kimi-Puchi”

The other day, while eating a convenience store bento in Japan, I noticed something strange. There was what looked like an egg yolk in the meal, but when I heated it in the microwave, it didn’t harden at all. Normally, an egg would firm up when heated, so this really puzzled me.

 

After doing some research, I found out it wasn’t a real egg at all — it was a product called “Kimi-Puchi” made by Kewpie. As the name suggests, it looks and tastes like an egg yolk, but it’s actually a specially processed food product.

 

Kimi-Puchi is made primarily from egg yolk, but it’s not just a simple yolk. Using Kewpie’s proprietary technology, it’s designed not to harden even when microwaved. This allows it to maintain its color, texture, and shape perfectly in convenience store bentos and ready-made dishes.

 

From a food technology perspective, it’s quite impressive. The ability to keep a consistent look and texture under various conditions is a huge advantage for mass-produced meals. Still, as someone who thought it was a real egg, I couldn’t help feeling a bit strange — it looks and tastes real, yet it doesn’t behave like one.

 

Perhaps this is another example of Japan’s advanced food engineering — balancing convenience, safety, and presentation. It made me think about how much innovation goes into something as simple as the “egg” in your lunchbox.
